- 1 kg ground pork
- 1 tbsp. chopped ginger
- 1 1/2 tablespoons fermented soybean paste
- Shaoxing wine 2 tbsp
- 1/2 teaspoon of sugar
- 1 tablespoon vegetable oil
- 1/2 cup needle mi ya ka (marinated mustard)
- 2 green onions
- tagliatelle sauce
- 1/2 cup cooked Chinese sesame paste
- 1/3 cup light soy sauce
- 1/4 cup chinjiang vinegar
- 4 garlic cloves, minced
- 2 green onions, chopped
- 2 tablespoons of honey
- 1 teaspoon Sichuan red chili (roasted and ground)
- 1 teaspoon green Sichuan pepper (toasted and ground)
- 3 teaspoons monosodium glutamate (can be omitted and added to separate meals)
- Serve 6-8 servings with fresh Chinese wheat noodles.
- 8 tablespoons chicken broth
- pepper oil
- Green onions and cilantro leaves for garnish
Steps to Make Dan Dan Mian (Dan Dan Noodles)
- Pork filling and gravy can be made ahead and stored in the fridge.
- Mix pork with ginger, fermented soybeans, whipped wine, sugar. Let stand 10 to 20 minutes while preparing the sauce. (Photo: fermented soybeans)
- Brown the green and red peppers in a skillet over high heat. Continue to stir and fry for about 2 minutes until fragrant (do not burn). Grind fried peppers with a coffee grinder or mortar for spices and spices

- Once the noodles are cooked, work quickly to keep the dish hot when ready to serve. Place noodles on each prepared plate, drizzle with additional pepper oil, garnish with 1 tbsp chicken broth, cilantro and green onions.
